The Ferreira family’s connection to the Langkloof and Jeffreys Bay regions extends back over three hundred years of South African history. The Art and Science of Our Distillation Process

The creation of our spirits is a careful blend of artistic endeavour and scientific precision. Each bottle contains the results of our dedication, beginning with the selection of superior ingredients and culminating in a spirit that reflects the unique character of our coastal home.

Sourcing Superior Ingredients

The quality of its raw materials is fundamental to any great spirit. We begin with premium molasses, sourced from the verdant fields of KwaZulu Natal. This rich, locally grown ingredient provides an authentic and robust flavour base. The water we use is natural, filtered rainwater, free from chemicals and gently purified to maintain its essential mineral balance. To initiate the transformation, we employ carefully selected imported yeasts and essential nutrients.

Meticulous Fermentation

The fermentation stage is where the initial character of our rum begins to develop. The molasses and water are mixed in precise ratios, and with the addition of yeast and nutrients, the sugars begin their conversion into alcohol. This process typically spans several days, during which we diligently monitor key parameters such as temperature, pH, alcohol formation, specific gravity, and BRIX levels. Constant adjustments ensure an optimal environment for yeast activity, guiding the development of the rum’s signature flavours and ensuring consistency.

Precision in Distillation

Our commitment to purity and quality is particularly evident in our distillation process. We employ a two-stage method to refine our spirits. Initially, a stripping run is conducted using a ten-bubble plate reflux column. This produces a pure and consistent low wine by removing water and heavier compounds. Following this, a second distillation, the spirit run, takes place in an eight-bubble plate reflux column. This step further refines the spirit, isolating the heart of the rum – resulting in a smooth, polished, and flavourful final product. This distillation is performed slowly and with great care to preserve the spirit’s complexity.

The Influence of Oak and Ocean

For our aged rums, the maturation proceeds in carefully selected second-fill bourbon casks. Before entering these oak barrels, the distillate is diluted using reverse osmosis water. The time spent in these casks allows the spirit to mellow and mature, imparting subtle and complex notes of oak, vanilla, caramel, and sometimes even hints of pawpaw and tannin.

The entire process, from fermentation to ageing, occurs just moments from the Indian Ocean. We believe the cool coastal breezes and the salt-laden air contribute a distinctive, subtle character to our maturing spirits, a unique imprint of Jeffreys Bay itself.
